A tasty sweet longganisa made from ground pork, spices and condiments. It is a Pampanga style longganisa because of its very sweet taste compared to other longganisa on other regions. It’s because most Kapampangan have a sweet tooth so even making cured meat like longganisa and tocino, the amount of sugar content is generous.

Pampanga longganisa is a Filipino pork sausage originating from the province of Pampanga. It is a type of hamonado longganisa. It is typically longer and thinner than other Philippine sausages. It is made with pork, garlic, brown sugar, black pepper, coarse salt, and vinegar.  It can be prepared with or without the casing. It is typically dyed orange or red with Achuete Achoite Annatto seeds. It is the most common sweet-type longganisa eaten throughout the Philippines.

Pampanga Longganisa is also known as Filipino sweet sausage because of its obvious sweet and delicious taste.  There are many ways to cook Pampanga Longanisa but the most popular is to Simmer in a little water over medium-high heat until the water evaporates, uncover and allow the sausages to fry in their own oil until golden brown.

A perfect addition to a typical Filipino Breakfast along with over easy eggs and a cup of garlic rice accompanied with a saucer of spicy vinegar (which is a mixture of white vinegar, chili, garlic, and ground black pepper) to dip this in.
