Rice (particularly white rice), is considered the ultimate staple in Filipino food. It is present in every household and is more than likely part of every Filipino’s meal – breakfast, lunch and dinner.

Jasmine rice (Milagrosa) is a long-grain variety of fragrant rice. Its fragrance, reminiscent of pandan and popcorn, results from the rice plant’s natural production of aroma compounds, of which 2-acetyl-1-pyrroline is the most salient.

Named after the sweet-smelling jasmine flower, jasmine rice is a long grain rice native to Thailand with a delicate floral and buttery scent. The secret to cooking it perfectly is using the right water-to-rice ratio. Typically, the instructions on the package call for 1½ cups water for every 1 cup of rice. That’s fine if you like your rice “al dente,” but it you prefer more tender, use a bit more water. Many recipes call for rinsing the grains before cooking.  Even when you rinse jasmine rice, the grains have a slightly sticky texture and cling together.

In the Philippines, this is called malagkit, literally “viscous” (sticky). This type of rice is used for delicacies that can be considered cakes, sweet treats or desserts.
